Candied Sweet Potatoes Serving Spoon

Candied Sweet Potatoes are tender sweet potatoes in a delicious brown sugar glaze.

This side dish tastes like a dessert and is often served with Thanksgiving and Christmas dinner.

Candied Sweet Potatoes are excellent with baked ham, green bean casserole, Parmesan green beans  and smoky collard greens.

ARE YAMS THE SAME AS SWEET POTATOES?

No.   True yams are dry, starchy root vegetables.  Flavor is more like yucca than sweet potatoes. They’re native to Africa, where 95 percent of yams are grown.

Their bark-like skin covers various flesh colors that include off-white, purple, and red.

THE SWEET POTATOES

This recipe calls for 3 large, orange flesh sweet potatoes.

This root vegetable grows underground.  For that reason, scrub before peeling to remove dirt from the skin.  

Wash sweet potatoes ONLY when ready to cook. 

If washed too early, they’ll absorb water which will cause them to turn dark and taste bad.

Use a sharp knife to cut off each end, to remove dark spots and to peel off skin. 

Slice in 1/2-inch-thick-rounds. 

Place slices in a colander or large bowl. 

Thoroughly rinse in cold or warm water.

BOIL UNTIL FORK TENDER

Place rinsed sweet potatoes in a large pot.  Cover with water.  

Boil sweet potatoes until fork tender.

 

Boil until fork tender.   Time depends on thickness.

Watch carefully to prevent overcooked/mushy texture.

INGREDIENTS:  BROWN SUGAR GLAZE 

The glaze’s ingredients are dark brown sugar, unsalted butter, ground nutmeg and pure vanilla extract.  Continued below.  

This recipe calls for 1/4 cup of firmly packed dark brown sugar.

INGREDIENTS (continued)

One lemon (for fresh lemon juice), unsweetened pineapple juice

and salt. 

Ingredients: Lemon for lemon juice, salt and unsweetened pineapple juice.

 

GLAZE COOKING TIPS

While sweet potatoes are boiling, preheat oven to 400 degrees and prepare glaze.

In medium saucepan, add unsweetened pineapple juice, 1-1/2 tablespoons fresh lemon juice, unsalted butter, brown sugar, and salt.  

INGREDIENTS FOR BROWN SUGAR GLAZE IN POT

 

Simmer over medium heat until bubbly.  

Remove from heat immediately after bubbles form.

Add nutmeg and pure vanilla extract. Stir until well combined.

Taste a cooled sample. If desired, add another tablespoon of dark brown sugar

and remaining 1-1/2 tablespoons of fresh lemon juice. Set aside.

Cooked glaze ready to pour over sweet potatoes.

 

Drain and cool sweet potatoes.

Carefully arrange in a 9×13 (or larger) baking dish.

Pour glaze over top. 

Glaze poured over sweet potatoes.

 

Cover with foil.  Bake 20 minutes.  Remove from oven.

Baste sweet potatoes with glaze.  

Return to oven (without foil) and bake until sweet potatoes are tender (30 to 45 minutes).

Baking time depends on thickness.

Ingredients

  • 3 large orange-flesh sweet potatoes orange flesh
  • 1/4 cup unsweetened pineapple juice orange juice or water
  • 3 tablespoons fresh lemon juice, divided from one lemon
  • 1 stick unsalted butter same as 1/2 cup
  • 1 cup dark brown sugar firmly packed
  • 1 teaspoon salt
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon ground nutmeg

Instructions

  • Cut dark patches off sweet potatoes. Do not peel.
  • Thoroughly rinse sweet potatoes. Pat dry with paper towel or clean dish towel.
  • Slice in 1/2-inch-thick-rounds. Place in large pot. Cover with water.
  • Simmer over medium heat until fork tender (firm, not mushy). About 20 to 45 minutes depending upon size.
  • While sweet potatoes are boiling, preheat oven to 400 degrees and prepare glaze.
  • In medium saucepan, add unsweetened pineapple juice, 1-1/2 tablespoons fresh lemon juice, dark brown sugar, and salt. Whisk constantly until sugar is dissolved and mixture is bubbly (3 to 4 minutes).
  • Remove from heat immediately after bubbles form.
  • Add nutmeg, pure vanilla extract. Stir until well combined. Taste a cooled sample. If desired, add another tablespoon of dark brown sugar and remaining fresh lemon juice. Set aside.
  • Drain sweet potatoes.
  • In a 9x13 (or larger baking dish), carefully arrange sweet potatoes neatly in a single layer.
  • Pour glaze evenly over the top. Cover with foil. Bake 20 minutes.
  • Remove from oven. Baste sweet potatoes with glaze.
  • Return to oven (without foil). Continue baking until sweet potatoes are tender (30 to 45 minutes). Baking time depends on thickness.
  • Serve hot!
