Simple Garden Salad

During the summer, a dear family friend generously shares fresh bell peppers, cucumbers, and tomatoes from their family's flourishing garden.  Perfect in a salad.   Or, sliced and sprinkled with salt and ground black pepper.  If desired, add croutons, shredded bell peppers, cheese, and grilled chicken to make this simple garden salad a meal.  Enjoy!

                               Variation:  Salad Foil Pack

Pack ingredients (minus dressing) in aluminum foil. 

Great for a picnic or cookout.  Add dressing when ready to eat.


3 cucumbers, peeled and sliced

2 large red tomatoes, sliced  OR 12 cherry tomatoes

1 purple onion, sliced

1 small red cabbage, shredded or torn into small pieces

   OR use iceberg lettuce

salt and ground black pepper to taste

salad dressing if desired (I used Italian dressing)


Toss ingredients together in a large bowl before serving.  If desired, add chopped grilled chicken, shredded cheese, croutons or whatever you prefer to make it a meal.  Enjoy!

Creative Serving Suggestion

Peel cucumbers.  Score with a fork to create a pretty design. Serve on a bed of torn pieces of purple cabbage. Top with sliced cherry or grape tomatoes.   If desired, season with salt and ground black pepper and drizzle with your favorite salad dressing.
