Broccoli Apple Salad, a refreshing cold side dish, contains fresh broccoli, raisins, and red onions drizzled with a creamy Homemade Salad Dressing.
WHAT IS BROCCOLI?
According to Wikipedia.org, broccoli is an edible green plant in the cabbage family (Brassicaceae, genus Brassica).
Broccoli comes from the Italian plural of broccolo, which means “the flowering crest of a cabbage”, and is the short form of brocco, meaning small nail or sprout.
Broccoli’s large flowering head, stalk and small associated leaves are edible vegetables.
USE FRESH BROCCOLI IS BEST IN THIS SALAD
Fresh broccoli florets are suggested for this recipe.
I don’t suggest frozen broccoli for this salad because turns mushy too quickly.
MAKE AHEAD
Broccoli Apple Salad can be made several hours ahead or up to two days.
Stir before serving.
STORAGE TIPS
Store this salad with the dressing in a container with an airtight lid.
After refrigeration, the fresh broccoli will remain fresh, the flavors will meld together and taste much better.
Please note that fresh broccoli will soften after three days in the refrigerator.

Ingredients
Broccoli Apple Salad
- 2 medium heads of broccoli, chopped into small pieces
- 1 small carrot, grated optional
- 3 medium red apples, cored and finely chopped
- 1/2 cup raisins dried cranberries or apricots
- 1/4 cup red onions, chopped or chopped shallots
- 1/2 cup walnuts, toasted (optional) pecans or sunflower seeds
- 1/2 cup low-fat vanilla yogurt or reduced-fat plain yogurt
Homemade Creamy Salad Dressing
- 1/2 cup Miracle Whip Dressing or use mayonnaise
- 1/4 cup sour cream more or less as desired
- 2 tablespoons freshly grated orange zest
- 1 tablespoon honey more or less as desired
- salt to taste
- black pepper to taste
Instructions
Broccoli Apple Salad
- In a large bowl, combine broccoli, carrots (if using) apples, raisins, and onions.
- Top with low-fat vanilla yogurt OR homemade salad dressing. Toss until evenly coated. Sprinkle with toasted walnuts (if using).
- Store in a container with a tight lid. Refrigerate up to two days. Please note fresh broccoli will soften after three days in the fridge.
Homemade Salad Dressing
- In a medium sized bowl, combine Miracle Whip (or mayonnaise), sour cream, orange zest, and honey. Stir until well combined.
- Season with salt and black pepper as preferred.
