Baked Cinnamon Sugar Tortillas

Baked Cinnamon Sugar Tortillas topped with whipped cream.

Perfect for leftover tortillas or when you want a crunchy sweet snack.   Excellent alone or with scoops of ice cream.  I like to dip them in a mixture of unsweetened crushed pineapples and real whipped cream (chilled).

  • 8 large flour tortillas
  • 1 cup unsalted butter, melted
  • 1/3 cup sugar
  • 2 teaspoons ground cinnamon

  • 8 large flour tortillas
  • 1 cup unsalted butter, melted
  • 1/3 cup sugar
  • 2 teaspoons ground cinnamon
Instructions
  1. Preheat oven to 350 degrees.
  2. Pour melted butter into a large platter or large bowl. Combine cinnamon and sugar in a separate large platter.
  3. Lightly coat both sides of a one tortilla in melted butter. Immediately rub both sides with cinnamon and brown sugar mixture. Repeat until all tortillas are done.
  4. Place on large ungreased cookie sheet. Okay if sides touch.
  5. Bake 8 to 10 minutes or until golden brown. Do not flip. Watch closely to prevent burning.
  6. Cool 5 minutes. Break each tortilla in half or in quarters before serving.

Vaccine Stickers (1st Shot)
Yesterday (March 11), I received the first Pfizer vaccine at my local hospital. My aunt was vaccinated on Tuesday (March 9). Delighted to share photos of the stickers we received from the nurse. Since I'm considered my aunt's caregiver, I was able to get my vaccine early. Not sure when my age group will be allowed to take the shot. My arm was extremely sore last night and I was feeling exhausted. Slept well. Feeling MUCH better today. https://www.cornbreadmillionaire.com I did a lot of thinking and praying before being vaccinated. Finally decided I'd rather deal with the symptoms of the vaccine than deal with that ugly virus.
