Melt unsalted butter (or margarine) in a large skillet over low-medium heat. After it melts, turn heat off.
In a medium bowl, add eggs, vanilla extract, heavy whipping cream, coarse ground black pepper, and ground cinnamon (if using). Whisk together until well combined. Set aside.
QUICKLY coat each bread slice one at a time in the egg mixture. Flip over to evenly coat both sides. Do not allow bread to sit in the mixture because it will get too soggy.
Cook each slice one at a time or carefully arrange all three in a single layer in skillet with melted butter. Pour leftover egg mixture over bread. Over low-medium heat, cook 2-3 minutes or until golden brown.
Use a spatula to flip over. Cook again 2 to 3 minutes or until golden brown.
Remove from heat and place on plate. Use knife to cut pieces apart.
Serve hot. Drizzle with honey or maple syrup.
