I LOVE to bake cakes! The ability to mix ingredients to create a delicious dessert is exciting.
How cool is that?!
Pineapple Upside Down Skillet Cake is a classic treat with a wonderful tangy-sweet flavor.
This moist yellow cake is made from scratch. It has a moist topping that contains brown sugar, lemon juice (surprise ingredient), pineapples, and maraschino cherries.
Bake in a skillet or deep cake pan.
Flipping the cake over onto a plate displays the pretty pineapple rings and maraschino cherries. This also allows the cake to better absorb the fruity mixture.
Back in the day, the pineapple topping was always too sweet for me. Rather than give it up forever, I experimented by drizzling fresh lemon juice over the topping before adding cake batter.
Hallelujah!!! Excellent results the very first time. Always a hit whenever served.
Original recipe from King Arthur Flour. I added lemon juice (surprise ingredient) which created a sweet-sour flavor.

BAKING POWDER TIP
Test baking powder before using to make sure it is active. Simply drop 1/4 teaspoon of baking powder into a glass with 2 tablespoons of water. Active baking powder bubbles vigorously. Discard if it bubbles lightly or not at all.
