This classic dessert has a wonderful tangy-sweet flavor. It is a moist yellow cake drenched in a topping made with brown sugar, lemon juice (surprise ingredient), pineapples, and maraschino cherries. Bake in a skillet or deep cake pan.
My unique twist makes this cake taste soooo much better. Back in the day, the pineapple topping was always too sweet for me. Rather than give it up forever, I experimented by drizzling fresh lemon juice over the topping before adding cake batter. Hallelujah!!! Excellent results the very first time. Always a hit whenever served.
Original recipe from King Arthur Flour. I added an ingredient to make the cake tangy-sweet. Also added maraschino cherries before baking (optional step). Used my favorite Dole Pineapple Slices in the topping. I have not been paid nor received free products for these friendly shout outs.
BAKING POWDER TIP: Test before using to make sure it is active. Simply drop 1/4 teaspoon of baking powder into a glass with 2 tablespoons of water. Active baking powder bubbles vigorously. Discard if it bubbles lightly or not at all.
