15 Bean Smoked BBQ Sausage Soup

Ingredients

15 Bean Smoked BBQ Sausage Soup

  • 1 package (20 ounces) 15 Bean Ham Soup, cooked I use Hurst's Ham Beens Brand.
  • 1 can (14.5 ounces) diced tomatoes and juice
  • 1 cup cooked sausage, thinly sliced Use pork or turkey.
  • 1-1/2 cup ground beef or ground turkey, cooked
  • 1 cup bacon, coarsely crumbled (optional)
  • 1/2 cup green bell peppers, chopped Seeds and ribs removed.
  • 1 large white onion, chopped
  • 1/4 cup dark brown sugar, divided
  • 1/4 cup smoked barbecue sauce, divided
  • 3 tablespoons Liquid Smoke

Spices

  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder
  • 1 teaspoon cumin seeds (or powder)
  • 1 teaspoon chili powder mild or hot
  • salt and black pepper to taste
  • NOTE: Add a dash or two of Tabasco sauce if desired.

Instructions

  • In a large pot or dutch oven, prepare beans according to instructions printed on package. I suggest overnight soak method and cooking with a smoked ham hock or smoked turkey necks. Simmer until beans are firm (not mushy).
  • Add chopped sausage, ground beef, crumbled bacon (optional), chopped green bell peppers, chopped onions, 1 tablespoon dark brown sugar, 2 tablespoons of barbecue sauce, and Liquid Smoke.
  • Stir until well combined.
  • Add chili powder, garlic powder (if using), onion powder and ground cumin (seeds or powder), chili powder, salt and black pepper to taste.
  • Stir until well combined.
  • Simmer over low heat for 10 minutes with lid on pot. Stir carefully to avoid breaking beans.
  • Taste. If desired, add remaining brown sugar and smoked barbecue sauce and a dash or two of Tabasco sauce.
  • Serve hot.
