French Toast Breakfast Sandwich

Ingredients

  • 2 medium eggs, beaten
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons reduced fat or low-fat milk Or use heavy whipping cream or whole milk.
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon black pepper (optional)
  • 1/4 teaspoon salt (optional)
  • 2 slices honey wheat bread
  • 2 sausage patties, cooked Cook patties according to instructions on package.
  • honey for drizzling
  • 1 tablespoon powdered sugar for garnish Use more or less.

Instructions

  • In a pie plate (or similar dish), combine eggs, vanilla, milk, ground cinnamon (if using), black pepper (if using), and salt (if using).
  • Stir vigorously with a fork until well combined. Soak each slice in mixture. Flip each slice over with a spatula to prevent tearing. Leave in pie plate.
  • Melt butter in a skillet over low-medium heat.
  • Use spatula to move soaked bread slices from pie plate to skillet with melted butter. Cook 3-4 minutes over low-medium heat. Flip over. Cook another 3-4 minutes. Both slices should be golden brown on both sides.
  • Turn heat off.
  • Use spatula to move French toast from skillet to plate. Place two cooked sausage patties on one slice. Top with second slice.
  • Drizzle sandwich with honey. Sprinkle with powdered sugar (optional). Serve hot.
