Broccoli Apple Salad
- 2 medium heads of broccoli, chopped into small pieces
- 1 small carrot, grated optional
- 3 medium red apples, cored and finely chopped
- 1/2 cup raisins dried cranberries or apricots
- 1/4 cup red onions, chopped or chopped shallots
- 1/2 cup walnuts, toasted (optional) pecans or sunflower seeds
- 1/2 cup low-fat vanilla yogurt or reduced-fat plain yogurt
Homemade Creamy Salad Dressing
- 1/2 cup Miracle Whip Dressing or use mayonnaise
- 1/4 cup sour cream more or less as desired
- 2 tablespoons freshly grated orange zest
- 1 tablespoon honey more or less as desired
- salt to taste
- black pepper to taste
Broccoli Apple Salad
In a large bowl, combine broccoli, carrots (if using) apples, raisins, and onions.
Top with low-fat vanilla yogurt OR homemade salad dressing. Toss until evenly coated. Sprinkle with toasted walnuts (if using).
Store in a container with a tight lid. Refrigerate up to two days. Please note fresh broccoli will soften after three days in the fridge.
Homemade Salad Dressing
In a medium sized bowl, combine Miracle Whip (or mayonnaise), sour cream, orange zest, and honey. Stir until well combined.
Season with salt and black pepper as preferred.
VARIATION
Before serving, stirĀ in1/2 cup of shredded lettuce.
