Creamy Alfredo
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 clove garlic, mashed optional
- 2 cups heavy whipping cream
- 1/4 cup Parmesan cheese, grated
- 3/4 cup mozzarella cheese, shredded
- 1/4 teaspoon salt more or less as preferred
- 1/4 teaspoon coarse ground black pepper Or white pepper. More or less as preferred.
Mushroom Chicken
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 cup cremini mushrooms, chopped
- 3 cups shredded rotisserie chicken or baked chicken (dark or white meat)
- coarse ground black pepper to taste
- salt to taste
Creamy Alfredo
In medium skillet, add butter and olive oil. Melt over low heat. Stir in mashed garlic (if using). Stir until fresh garlic has softened.
Pour in heavy whipping cream. Stir until well combined.
Add grated Parmesan cheese and shredded mozzarella cheese. Stir until melted. Remove from heat. Set aside.
Mushroom Chicken
In a separate medium skillet, melt butter and olive oil over low heat. Add chopped cremini mushrooms. Stir until soft (3 to 5 minutes).
Add chopped rotisserie chicken (or baked chicken). Stir until warm (3 to 5 minutes). Remove from heat.
Pour mushroom chicken mixture into creamy alfredo sauce. Stir until evenly combined.
Serve hot.
Store leftovers in a tightly sealed container. Refrigerate for up to 5 days. Cold Alfredo Sauce is thick. To melt, place in microwave for 15-20 seconds. After warming, it will melt and taste good.
