Ingredients

Creamy Alfredo

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 clove garlic, mashed optional
  • 2 cups heavy whipping cream
  • 1/4 cup Parmesan cheese, grated
  • 3/4 cup mozzarella cheese, shredded
  • 1/4 teaspoon salt more or less as preferred
  • 1/4 teaspoon coarse ground black pepper Or white pepper. More or less as preferred.

Mushroom Chicken

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 cup cremini mushrooms, chopped
  • 3 cups shredded rotisserie chicken or baked chicken (dark or white meat)
  • coarse ground black pepper to taste
  • salt to taste

Instructions

Creamy Alfredo

  • In medium skillet, add butter and olive oil. Melt over low heat. Stir in mashed garlic (if using). Stir until fresh garlic has softened.
  • Pour in heavy whipping cream. Stir until well combined.
  • Add grated Parmesan cheese and shredded mozzarella cheese. Stir until melted. Remove from heat. Set aside.

Mushroom Chicken

  • In a separate medium skillet, melt butter and olive oil over low heat. Add chopped cremini mushrooms. Stir until soft (3 to 5 minutes).
  • Add chopped rotisserie chicken (or baked chicken). Stir until warm (3 to 5 minutes). Remove from heat.
  • Pour mushroom chicken mixture into creamy alfredo sauce. Stir until evenly combined.
  • Serve hot.
  • Store leftovers in a tightly sealed container. Refrigerate for up to 5 days. Cold Alfredo Sauce is thick. To melt, place in microwave for 15-20 seconds. After warming, it will melt and taste good.
