Homemade Onion Rings

- 2 large yellow onions (sweet) Or use white onions (savory).
- 1 teaspoon salt, divided
- 1/2 teaspoon ground black pepper, divided optional
- 1 cup buttermlk cultured whole or low-fat
- 2 cups self-rising flour, sifted
- vegetable oil for frying
Prepare onions. Cut away ends. Remove skins. Slice into desired thickness. Separate into rings.
Place onion slices in a medium bowl or plate. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of ground black pepper (if using). Set aside.
Pour 1 cup of buttermilk into a measuring cup or medium bowl.
Pour sifted self-rising flour into a medium bowl. Season with 1/2 teaspoon salt and 1/4 teaspoon of ground black pepper (if using). Use a fork to stir together until well combined.
Use a fork to dip one onion ring in buttermilk mixture. Shake off excess. Repeat until all onion rings have been dipped.
Dredge each onion ring in the seasoned flour. Shake off excess. Repeat until all onion rings have been coated in flour.
Pour 1 cup vegetable oil in a large skillet. Warm over low heat until hot (not smoking). Slowly add prepared onion rings in one layer.
Over medium heat, fry 1-2 minutes on both sides until golden brown. Repeat until all onions are fried. Onion rings fry quickly. Watch closely to prevent burning.
Drain on paper towels.
Serve hot.
