Spinach and Onions

This nourishing side dish is full of savory flavor.  Pairs well with a variety of mains.  Quick and easy to make with frozen spinach, chopped onions and seasonings. Recipe and photography by Beverly Davis for CornbreadMillionaire.com.

Ingredients

  • 3 tablespoons unsalted butter
  • 1 small onion, chopped Yellow or white onion.
  • 2 packages frozen spinach Each package weighs 10 ounces.
  • salt to taste
  • black pepper to taste
  • 1/2 cup water

Instructions

  • Melt butter in saucepan over low-medium heat. Never cook spinach in a saucepan with an aluminum interior because it will discolor.
  • Add chopped onions, frozen spinach and preferred amounts of salt and black pepper. Stir until well combined.
  • Add water. Stir until well combined. Cover with lid and BOIL over high heat for 3 minutes.
  • Reduce heat to low-medium. Cover with lid and SIMMER for 5-7 minutes or until onions reach desired tenderness. Watch closely to prevent scorching. If necessary, add 1/4 cup more water until onions reach desired tenderness.
  • Serve hot.
