Shrimp Scampi

Servings: 2 servings
- Pasta of your choice angel hair, linguini, spaghetti
- 12 medium cooked shrimp, peeled and deveined or use 6 large cooked shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/4 cup finely diced onion yellow or white
- 1 teaspoon Italian seasoning or 1 minced garlic clove
- 1 teaspoon paprika
- salt to taste
- black pepper to taste
- 2 teaspoons fresh lemon juice, divided
- grated Parmesan Cheese for garnish optional
Cook pasta according to package directions. Drain and place in serving dish.
Add unsalted butter and olive oil to a frying pan. Over low heat, stir until butter is melted.
Add Italian seasoning, paprika and chopped onions. Cook until onions are translucent (2-3 minutes). Add salt, black pepper and lemon juice. Stir until evenly combined.
Stir in cooked shrimp is hot and until evenly coated (about 2 minutes). Turn heat off. Avoid overcooked/rubbery shrimp by Immediately removing cooked shrimp from hot frying pan and placing in a bowl.
Spoon hot shrimp scampi over cooked pasta.
Sprinkle servings with grated Parmesan cheese (optional).
