Preheat oven to 350 degrees.
In a large bowl, thoroughly combine ground chuck (OR ground beef OR ground turkey), salt, ground black pepper, crushed tortilla chips, chopped bell pepper (if using), shredded cheddar cheese, and chopped onions.
In a medium bowl, whisk together beaten eggs, taco seasoning mix, milk, and taco sauce. Add to meat mixture. Stir together until well combined. Set aside.
Thoroughly grease bottom and sides of a 9x5 loaf pan with vegetable oil or line pan with parchment paper.
Press mixture into prepared loaf pan. Drizzle taco sauce across the top (optional).
Bake in the preheated oven until thoroughly cooked and top is brown (50 minutes to 1 hour).
After removing from oven, lightly drizzle taco sauce over top. Sprinkle with dried parsley (optional).
Allow to stand 5 to 10 minutes so the Taco Meatloaf will get firm... which makes it easy to cut.
