Sautéed Asparagus

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 pounds asparagus cut on bias into 2-inch pieces
  • 1/4 teaspoon coarse salt OR regular table salt more or less as preferred
  • 1/4 teaspoon coarse ground black pepper more or less as preferred
  • 1 teaspoon lemon zest
  • juice of one lemon seeds removed
  • shaved or shredded parmesan cheese (optional) garnish
  • lemon wedges for garnish optional

Instructions

  • Warm olive oil in a large skillet over medium-high heat. Add asparagus, coarse (or regular) salt, and coarse ground black pepper.
  • Reduce heat to medium. Stir frequently until asparagus is crisp-tender (4 to 5 minutes). For soft asparagus, continue cooking 2-3 minutes longer.
  • Stir in lemon zest and cook about 1 minute longer.
  • Sprinkle lemon juice of sautéed asparagus. Stir until evenly combined. Remove from heat.
  • Immediately transfer sautéed asparagus onto a serving platter.
  • Sprinkle each serving with grated or shaved Parmesan cheese (optional).
  • Garnish with lemon wedges (optional).
