Ingredients

  • 2 large yellow onions (sweet) Or use white onions (savory).
  • 1 teaspoon salt, divided
  • 1/2 teaspoon ground black pepper, divided optional
  • 1 cup buttermlk cultured whole or low-fat
  • 2 cups self-rising flour, sifted
  • vegetable oil for frying

Instructions

  • Prepare onions. Cut away ends. Remove skins. Slice into desired thickness. Separate into rings.
  • Place onion slices in a medium bowl or plate. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of ground black pepper (if using). Set aside.
  • Pour 1 cup of buttermilk into a measuring cup or medium bowl.
  • Pour sifted self-rising flour into a medium bowl. Season with 1/2 teaspoon salt and 1/4 teaspoon of ground black pepper (if using). Use a fork to stir together until well combined.
  • Use a fork to dip one onion ring in buttermilk mixture. Shake off excess. Repeat until all onion rings have been dipped.
  • Dredge each onion ring in the seasoned flour. Shake off excess. Repeat until all onion rings have been coated in flour.
  • Pour 1 cup vegetable oil in a large skillet. Warm over low heat until hot (not smoking). Slowly add prepared onion rings in one layer.
  • Over medium heat, fry 1-2 minutes on both sides until golden brown. Repeat until all onions are fried. Onion rings fry quickly. Watch closely to prevent burning.
  • Drain on paper towels.
  • Serve hot.
