In fact, I purchased the two main ingredients at my local Walmart: frozen mixed vegetables ($1) and diced tomatoes (.92 cents). How cool is that?! Â
Add 2 pounds of ground beef and it’s about $6 for this main dish. Makes about six servings.Â
Pairs well with Homemade Self-Rising Cornbread. Serve for lunch or dinner with and a tall glass of iced tea.Â
Â
Frozen mixed vegetables add color, texture and flavor.Â
To keep the most vitamins, frozen vegetables must be cooked al dente (firm). Avoid overcooking (mushy).
Did You Know?
Frozen green beans contain more than twice the vitamin C that fresh green beans have.
Consume frozen vegetables in the first three weeks after purchase to preserve taste, texture and nutritional value.
To find out if frozen vegetables still have a good taste and texture, touch the bag before purchasing. Feel blocks of ice? Do not purchase.
When frozen vegetables form a block shape, it means the vegetables have started dehydrating and will likely have an unpleasant taste.
Should frozen vegetables be washed?
Vegetable soup without meat is amazing. Great recipe for vegetarians. Also a good idea for Meatless Monday.  ÂÂPhotographed before white onions turned clear. My precious aunt (73 years of life) loves spaghetti noodles in her vegetable soup.Â
