ALWAYS INSPECT, SORT & RINSE PINTO BEANS BEFORE COOKING
Never pour dry pinto beans directly from the bag into the pot.
Dry beans are a natural agricultural product. Despite using modern cleaning equipment, foreign material and grains may get into the package.
I used Hurst HamBeen’s Brand to make these savory Southern Pinto Beans recipe.
HOW TO INSPECT & SORT PINTO BEANS
Pour dry pintos into a large bowl or spread out on a flat surface.
Carefully search for foreign particles. Remove and discard whatever you find.
HOW TO RINSE PINTO BEANS
Place a colander or bowl in the sink.
Pour in sorted pinto beans.
Thoroughly rinse with cold water.
BENEFITS OF SOAKING PINTO BEANS BEFORE COOKING
*Always soak them before cooking to get rid of gas.
*Soaked beans cook faster than unsoaked.
*Soaked beans are much easier to digest.
HOW TO SOAK PINTO BEANS (AFTER SORTING & RINSING)
Pour sorted/rinsed pinto beans into a pot.
Add water until it rises 2 inches above the beans.
Turn on high heat.
When beans begin to boil, stop after 2 minutes.
Remove from heat.
QUICK SOAK METHOD
Allow beans to soak for 2 hours.
OVERNIGHT SOAK METHOD (SUGGESTED)
Soak for 8 hours or overnight.
COVER POT WITH LID
After preparing pinto beans to soak (quick or overnight),
cover pot with a lid.
DO THIS AFTER SOAKING PINTO BEANS
Place a colander or large bowl in sink.
Pour in the soaked pinto beans and soak water.
Rinse thoroughly with cold water.
HOW TO PREPARE SMOKED HAM HOCKS
Smoked ham hocks provide the delicious smoky ham flavor in pinto beans.
For maximum flavor, simmer ham hock at least one hour before cooking to soften it and to season the water with its smoky ham flavor.
One hour before pinto beans are through soaking, prepare the ham hock.
Thoroughly rinse ham hock in warm water. Place in a large pot.
Add water until it’s two inches above the meat.
Cover pot with a lid. Simmer over medium-high heat for 1 hour.
Check water level after 30 minutes.
If water drops below the ham hock, add more to cover it.
After 1 hour, turn heat off. Cover pot with lid and set aside
until pinto beans are through soaking.
SMOKED TURKEY WINGS (ALTERNATIVE SEASONING)
Smoked Turkey Wings are sold in medium sized pieces slathered with delicious smoked seasonings. Do not rinse before cooking.
Perfect for individuals who avoid pork for whatever reason.
I prefer Smoked Turkey Wings Cajun Style.
HAM FLAVOR PACKET
This small packet has a lot of smoky ham flavor. It’s included with the brand of pinto beans I purchased for this recipe.
When the pintos are done, add contents of the packet. Stir gently.
Cover pot with lid. Let stand two minutes.
SERVE AS A SIDE OR MAIN DISH
Semi-tender beans (firm texture) in a semi-thick soup.
