Frozen vegetables last longer than fresh.Â
Fresh vegetables don’t have a very long lifespan. They must be eaten within days of purchasing or soon after harvesting from the garden. Frozen vegetables last much longer.
 I enjoy combining ingredients to create a burst of flavor. Mixed vegetables and diced tomatoes taste like vegetable soup without meat. Very filling and tastes good.
Tender black-eyed peas and diced tomatoes with a dash or two of hot sauce are also delicious.
A few days during the month, I eat ONLY vegetables. Nothing wrong with meat. In fact, I LOVE meat. I also LOVE veggies.
With that being said, I experiment in search of creative combinations to keep my food interesting.Â

Vegetables are low in calories.
Vegetables are full of vitamins, nutrients and minerals.Â
Did you know a tomato is the fruit of a tomato plant?  The tomato has seeds and grows from a flowering plant. Therefore, botanically it is classified as a fruit, not a vegetable.
According to National Geographic Kids tomatoes can be red, yellow, pink, purple, black and white.

Mixed Vegetables
Mixed Vegetables are loaded with savory flavor. This savory side dish is quick and easy to make with frozen mixed vegetables, a fresh tomato and seasonings. Recipe and photography by Beverly Davis for CornbreadMillionaire.com.
Empty frozen contents of bag into a 2-quart saucepan. Add 1 cup of chicken broth (or use water) and unsalted butter.
Season with salt, black pepper and garlic powder (or onion powder).
Cover and cook over medium heat for 5 minutes. Stir occasionally. Add diced tomatoes.
Cover and simmer for 2 more minutes or until desired tenderness.
Serve immediately.
