This dessert is a variation of my super popular Cream Cheese Pound Cake made with a vanilla cake mix.

Key Ingredient: one box of super moist lemon cake mix.
Remaining Ingredients (Clockwise): 1/2 cup water, 4 medium eggs, lemon extract, unsalted butter, 1 package cream cheese (8 ounces), 1/2 cup granulated sugar, and 1 stick unsalted butter.
FLAVORING: Pure Lemon Extract
Thoroughly grease a standard bundt pan with vegetable oil OR no-stick cooking spray.
THE LEMON GLAZE
The Lemon Glaze is made with confectioners sugar and fresh lemon juice.
Drizzle this glaze over Lemon Cream Cheese Pound Cake and enjoy a refreshing lemony tang.
WHAT IS A POUND CAKE?
Technically, this recipe is not a pound cake. The weight is the inspiration for the name.
HOW TO CHECK A POUND CAKE FOR DONENESS
A pound cake is done when a knife (not a toothpick) is pressed in center all the way down until it lightly touches the bottom.
A toothpick only pierces the top because it’s too short to touch the bottom. A toothpick can come out clean… while the bottom of the pound cake is not done. A knife is more effective.
Gently press knife to bottom of cake so as to avoid scratching bottom of the pan.
If the knife comes out clean, the pound cake is done.
