Easy to make with a few simple ingredients. I used delicious salad cubes provided by Mt. Olive Pickles.

What is an appetizer?
An appetizer is a small amount of food served before the main course. Also called snacks or hors d’oeuvres.
An appetizer is meant to stimulate your appetite, making you extra hungry for your meal.
The other important purpose of appetizers, especially in restaurants, is to keep hungry people fed until the main dish is served.
The inspiration for this creative combo came to me recently. I already had homemade chicken salad in the fridge to serve for lunch the next day.
Two extra hard boiled eggs were also in the fridge. On a whim, I decided to slice, remove yellows and stuff with chicken salad.
Cute topping ideas are Ritz Crackers and dill pickles. Olives are a good choice. Use whatever else comes to mind.
Finally, placed both eggs on Ritz Crackers. VOILA!! Pretty deliciousness.
What’s the difference between mayonnaise and Miracle Whip?
Mayonnaise is a delicious combination of fat and water held in suspension by an egg. The egg works like a magnet, bonding the fat from the oil and the liquid from the vinegar (or lemon juice). Unlike salad dressings that separate, the egg makes mayonnaise a thick solid and spreadable consistency.

According to the U.S. Food and Drug Administration (FDA), anything labeled as “mayonnaise” must contain 65% vegetable oil by weight.
What is Miracle Whip?
This brand name of mayonnaise is a completely different product.
Miracle Whip is sweeter and spicier than mayo. Sweetened with high-fructose corn syrup and contains more sugar than most brands of mayonnaise.
When it comes to nutrition, Miracle Whip contains about half the fat and calories as compared to mayonnaise. Perfect for calorie counters.

Place LARGE eggs in medium sized saucepan. Cover with water. Add 1/4 cup a salt (yes, it's a lot). Boil over high heat for 5 minutes. Drain hot water. Place hard boiled eggs in a bowl. Cover with cold water. Add 6 ice cubes. Set aside. Prepare chicken salad.
Homemade Chicken Salad
Place all ingredients in a medium sized bowl. Stir until well combined.
Tap cold hard boiled eggs on counter. Peel completely. Slice in half with a serrated knife.
Remove egg yolks. Save for later use. Or, finely chop and stir into chicken salad.
Stuff each egg white with a generous tablespoon of chicken salad. Insert a Ritz cracker in center. Or, top with 2 dill pickles and insert toothpick in middle.
Serve each stuffed egg (finger food) on top of one or two Ritz crackers.
