  1. Pour mixed vegetables into a colander. Thoroughly rinse in warm water. Allow to drain. Pour into a medium-sized saucepan.
  2. Add diced tomatoes, salt and black pepper to taste, dried oregano, chopped white onions, unsalted butter, and cooked ground beef or preferred meat (if using).
  3. Warm over low-medium heat for 10 minutes until boiling hot and vegetables are al dente. Stir constantly to prevent sticking. To keep the most vitamins, frozen vegetables must be cooked until al dente.
  4. Serve hot. If desired, serve over cooked spaghetti noodles (optional).
  5. If desired, place prepared dish in a tightly sealed container and refrigerate. Excellent make-ahead. Warms easily in microwave or on stove top.
