Taco Meatloaf is a creative flavor twist on the classic meatloaf. Easy to make with simple ingredients. This recipe is my adjusted version of a Mexican Taco Meatloaf recipe on Allrecipes. Adjusted version and photography by Beverly Davis for CornbreadMillionaire.com
1 or 2poundsground chuckor use lean ground beef or ground sirloin
In a large bowl, thoroughly combine ground chuck (OR ground beef OR ground turkey), salt, ground black pepper, crushed tortilla chips, chopped bell pepper (if using), shredded cheddar cheese, and chopped onions.
In a medium bowl, whisk together beaten eggs, taco seasoning mix, milk, and taco sauce. Add to meat mixture. Stir together until well combined. Set aside.
Thoroughly grease bottom and sides of a 9×5 loaf pan with vegetable oil or line pan with parchment paper.
Press mixture into prepared loaf pan. Drizzle taco sauce across the top (optional).
Bake in the preheated oven until thoroughly cooked and top is brown (50 minutes to 1 hour).
After removing from oven, lightly drizzle taco sauce over top. Sprinkle with dried parsley (optional).
Allow to stand 5 to 10 minutes so the Taco Meatloaf will get firm… which makes it easy to cut.
