Sauteed Yellow Squash and Zucchini
Instructions
  1. Place olive oil and and unsalted butter in a large skillet over low-medium heat. Add garlic (if using) and stir constantly until fragrant (about 1 minute).
  2. Quickly arrange zucchini, squash and sliced onions in one layer. Evenly sprinkle Italian seasoning, 1/4 teaspoon salt and 1/4 teaspoon black pepper over top.
  3. Allow to cook over low-medium heat until dark spots form (2-3 minutes). Watch closely to prevent burning.
  4. Flip over. Continue cooking 2-3 more minutes OR until desired tenderness.
  5. Turn heat off. Taste a cooled sample. Season with salt and black pepper as preferred.
  6. Serve hot or warm.
