Roasted Broccoli & Cauliflower with Parmesan Cheese
Roasted Cauliflower is loaded with flavor.  Serve this vegetable as a side dish or light meal.  Easy to make with simple ingredients. Recipe and photography by Beverly Davis for CornbreadMillionaire.com.

Instructions
  1. Preheat oven to 375 degrees.
  2. Line baking pan with parchment paper. Set aside.
  3. Turn whole cauliflower upside down (stem end up). Cut off and discard stem and leaves.
  4. While cauliflower is upside down (stem end up), carefully slice into 1/2″ strips. Slicing this way keeps cauliflower from crumbling.
  5. Arrange strips in a single layer in the baking pan. Brush with olive oil. Lightly sprinkle with garlic powder (if using) and paprika (if using). Season with salt and black pepper as preferred. Turn each strip over and repeat.
  6. Bake 20 minutes. Flip over and continue roasting 15 minutes OR until easily pierced with a fork (but not mushy).
  7. Before serving, sprinkle with grated Parmesan cheese (optional).
