Instructions
  1. Preheat oven to 375 degrees.
  2. In medium sized bowl, combine softened cream cheese, softened butter, egg, and vanilla extract (if using).
  3. Using a large spoon or an electric mixer, cream together until smooth.
  4. Pour in dry cake mix. Use a sturdy spoon to stir together until well combined.
  5. Cover and refrigerate 30 minutes to 1 hour.
  6. Shape dough into 1-inch balls or larger if preferred.
  7. Place 1″ apart on an ungreased cookie sheet or line with parchment paper. Flatten lightly.
  8. Roll each ball in crumbled walnuts or crumbled chocolate candies. Flatten slightly.
  9. Bake 11 to 15 minutes OR until soft and puffy. Baked cookies will be very tender and will look like they’re not done. They will firm “slightly” while cooling. Avoid over baking because the cookies will be dry.
  10. Move to rack or large platter for cooling.
  11. Makes 20 to 24 cookies depending on size.
  12. Store cookies in a container with an airtight lid. Keep refrigerated.
