Chicken Salad Stuffed Eggs

  • 4 large eggs These will be used for stuffing.
  • water Use for boiling and cooling.

Instructions
Hard Boiled Eggs
  1. Place LARGE eggs in medium sized saucepan. Cover with water. Add 1/4 cup a salt (yes, it’s a lot). Boil over high heat for 5 minutes. Drain hot water. Place hard boiled eggs in a bowl. Cover with cold water. Add 6 ice cubes. Set aside. Prepare chicken salad.
Homemade Chicken Salad
  1. Place all ingredients in a medium sized bowl. Stir until well combined.
  2. Tap cold hard boiled eggs on counter. Peel completely. Slice in half with a serrated knife.
  3. Remove egg yolks. Save for later use. Or, finely chop and stir into chicken salad.
  4. Stuff each egg white with a generous tablespoon of chicken salad. Insert a Ritz cracker in center. Or, top with 2 dill pickles and insert toothpick in middle.
  5. Serve each stuffed egg (finger food) on top of one or two Ritz crackers.
