Instructions
  1. Pour water into medium-sized saucepan. Boil over medium-high heat. Add 1 tablespoon of unsalted butter or margarine and milk.
  2. Slowly stir in grits. Reduce heat to medium-low. Cover and cook 5 to 7 minutes or until desired thickness. Stir every two minutes. Grits will thicken more as they cool.
  3. Remove from heat. Add remaining 2 tablespoons of butter and salt as preferred. Sprinkle with grated cheese and stir.
  4. If too thick, stir in 2 tablespoons of hot water. Repeat if necessary to reach desired consistency.
  5. Serve hot.
