Banana Bread

Instructions
  1. Preheat oven to 350 degrees.
  2. In medium size bowl, whisk together flour, baking soda, and salt.
  3. Add sugar and stir until well combined.
  4. Add vanilla, mashed bananas, unsalted/melted butter, mashed bananas, and chopped walnuts (if using). Stir until well combined. Set aside.
  5. Thoroughly grease bottom and sides of a small loaf pan (8 x 5 x 3) with vegetable oil cooking spray, vegetable oil, or butter.
  6. Pour in batter. Bake 40 to 45 minutes or until knife inserted in center comes out clean.
  7. Serve warm or cold. Tastes even better the next day. After baking, cool completely. Place in sealed container and refrigerate overnight. Slice and serve!
Recipe Notes

Add 1/2 cup chopped walnuts if desired.
