Skillet Apple French Toast

An amazing variation of my Skillet French Toast.  Topped with sliced red apples.  Oven baked in a buttered cast iron skillet provided by Lodge Manufacturing.  Taste and texture similar to bread pudding.  Delicious drizzled with caramel sauce or maple syrup. 

Makes one 8" skillet.


4 eggs

2/3 cup half and half

1/2 teaspoon vanilla extract

1 teaspoon granulated sugar

1/4  teaspoon ground cinnamon

pinch of ground nutmeg

2 tablespoons unsalted butter with cream

4 slices wheat bread, each cut into four pieces (see photo)

2 red apples, sliced

2 tablespoons lemon juice

caramel sauce (optional)

maple syrup (optional)


Combine first six ingredients in a medium-sized bowl.  Stir with an electric mixer for 3 to 4 minutes.  Set aside.  Grease bottom and sides of an 8" cast iron skillet with butter.  Place 8 pieces of bread in bottom.  Top with half of mixture.  Top with remaining 8 pieces of bread.  Pour remaining mixture over top.  Bake 35 to 40 minutes.  French toast will thicken to a bread pudding texture.  Apples will be slightly tender.  Drizzle hot servings with caramel sauce or maple syrup.
