Fresh tomato slices and low sodium ham sandwiched between one sliced cucumber. The cucumber is peeled and scored with a fork. Drizzle with a favorite salad dressing, sprinkle with salt, and ground black pepper. Low carb. Few calories. If desired, use turkey or chicken.
Grilled Egg Omelet Breakfast Sandwich

2 slices of wheat bread 1/4 cup chopped onions
1 tablespoon of butter or margarine 1/4 cup chopped bell pepper
vegetable oil cooking spray 1/4 cup shredded cheddar cheese
2 large eggs salt and ground black pepper to taste
Made this favorite sandwich in a grill pan provided by Lodge Manufacturing. Warm grill pan over low heat until hot. Butter both sides wheat bread. Place on grill. Flip over and toast the other side. Remove from grill set aside. In small bowl, combine eggs, onions, bell peppers, shredded cheese, salt, and ground black pepper. Mix well. Pour into hot grill pan. Cook about 2 minutes. Flip and cook another 2 minutes. Or, cook eggs as preferred. Remove from pan. Turn off heat. Place cooked eggs on one slice of grilled wheat toast. Top with second slice. Cut the thick sandwich in half. Serve hot. Makes 2 servings.
