Chunky Shrimp Salsa

The inspiration for this deliciousness is the sensationviral recipe, Avocado Shrimp Salsa by www.NatashasKitchen.com,  my favorite food blogger.  My version contains whole and chopped shrimp, red onions, and surprise ingredients which are curly-leaf parsley and a little garlic powder.  YUM!  Superb side dish, snack, or use as a topping on a grilled burger or taco.  Add more or less of each ingredient as desired.  Both the skillet and grill pan made by Lodge Manufacturing are perfect for cooking the shrimp and burgers


10 shrimp cooked, divided (add more shrimp if desired)

1/4 cup red onion, diced

1/4 cup white onion diced

1 Haas avocado, peeled and diced

1 small cucumber, peeled and diced

1 Roma tomato, diced

1/4 cup curly-leaf parsley, chopped

1 lime for squeezing

1/8 teaspoon garlic powder (optional)

salt to taste


Set aside 4 whole shrimp.  Cut each of the other six into

3 pieces.  Place in a large bowl.  Add remaining ingredients.  Squeeze lime enough lime juice over mixture to coat.  Add

more juice  if desired.  Toss together.  Cover and refrigerate. 

Makes about 2 cups.
