Make Ahead Cheesy Sausage Egg Muffins

Eggs, Pepper Jack cheese, and chopped beef cocktail links (tastes like smoked sausage) baked in a muffin tin. Keeps well in fridge. Warm before serving with pancakes, waffles, or biscuits. Excellent holiday breakfast idea. After a heavy snow storm recently, I wanted to make some cheesy muffins. The roads were still icy. A trip to the grocery store was not an option. I used what was already in the fridge. Pepper Jack cheese, Beef Litl' Smoky Cocktail Links, and eggs. If cheddar cheese was available, it would've been added. Pepper Jack Cheese is spicy with a creamy smooth texture, blended with habanero and jalapeno peppers. Superb in these delicious baked egg muffins. Enjoy this easy recipe!
6 small beef cocktail links (I used Beef Lil' Smokies)*
2 cups water
6 medium eggs
2 tablespoons finely chopped, seeded jalapenos (optional)
3 tablespoons 2% or whole milk
1/2 teaspoon salt
1/2 teaspoon ground black pepper
vegetable oil cooking spray
pieces of Pepper Jack cheese
6 tablespoons shredded cheddar cheese (optional)
Place whole cocktail links in a medium-sized saucepan on top of stove. Fill with water. Add cocktail links. Cover and simmer 10 minutes on each side. This will reduce sodium. Water will look murky. Drain. Set aside cooked cocktail links.
Preheat oven to 375 degrees. Place ungreased muffin tin (6 cups) in oven. Whisk together eggs, milk, salt, ground black pepper, and chopped jalapenos (if using) in a medium-sized bowl. Set aside. Carefully remove hot muffin tin from hot oven. Spray with vegetable oil cooking spray. Spoon egg mixture into each cup until 3/4 full. Top with pieces of shredded Pepper Jack cheese. Sprinkle each cup with 1 tablespoon shredded cheddar cheese (if using). Finally, place one chopped cocktail link (4 pieces) in each cup of egg mixture.
Bake 15-20 minutes or until edges are golden brown. Egg muffins will rise dramatically while baking and deflate while cooling. Makes 6 egg muffins.
Smoked beef sausage is an excellent substitute for the cocktail links. Simmer in water before using in this recipe. If desired, cook more to serve on the side.
